About a week or less before Halloween, you don’t want them to start rotting before the big day!

No more then a week before. You can do some things to the pumpkin to keep it from rotting. After carving put a thin layer of Vasalline along the cut edges, this will help hold the moisture in. When not on display wrap the pumpkin in saran wrap and place in the refrigerator. Make up a spray bottle of bleach and water and regularly spray the inside of the pumpkin, this will keep the mold from growing quickly. They do make special sprays to use to extend the life of the pumpkin, you can buy them online, but the bleach water combination works the same. Finally, if all els fails and your pumpkin is withered looking you can soak it overnight in a large bucket filled with water and a bit of bleach. For some very cool pumpkin carving patterns check.
